Apple Pie Pops
These were SO fun to make! I can’t get over how well they turned out for my first try. I mean, it’s not rocket science, but still, things could always go wrong.
If you know my baking style by now, you know I appreciate the “shortcuts” anywhere I can find them.
For this recipe, I used refrigerated pie crust, because it’s quick and easy, and I do happen to like the taste.
For the filling, it was my own recipe, which I’ll share, but you are more than welcomed to use any apple pie filling recipe you want- including canned pie filling. Whatever floats your boat! (Scroll to bottom for recipe)

This is the Ghost cookie cutter I used!



Apple Pie Filling
7-9 baking apples/ peeled + finely chopped
1/3 cup lemon juice
1 cup of cinnamon sugar blend
1/2 tablespoon of vanilla extract
Half stick of butter (chopped in small cubes)
Pinch salt
Egg wash (1 egg/ 1 tbsp water whisked together)
Yields about 24 pops
Materials
Parchment paper
Cookie sticks (oven safe)
Toothpick
Directions
Preheat over to 400 degrees.
Mix all ingredients in a large bowl and set aside.
Roll out pie crust, using cookie cutter, cut out shapes. You will need two shapes per cookie stick (bottom + top layer).
Place one dough cut out on parchment lined cookie sheet. Center cookie stick onto the middle of the dough. Carefully add a small scoop of pie filling mixture in the center, making sure not to cover edges of dough.
Add the top cut out layer to cover pie filling, (should like like a sandwich at this point) and firmly press down all around the edge of dough using a fork.
Creative tip: If you want to give your ghost cut out a face, use toothpick to make three holes. Two circles for the eyes and an oblong shape for the mouth.
Using a basting brush, light brush each pie with egg wash.
Place cookie sheet in oven and bake until crust is a nice golden brown, about 10-12 minutes.
Let cool for 2-3 minutes- just to make sure cookie stick is secured to pie.
So simple! So yummy and literally anyone who likes apple pie WILL love it!
