Watermelon Popsicles
This is about the 289371 watermelon recipe I’ve shared but you know what, it’s a fun fruit to work with and my kiddos love it 😊
Honestly nothing reminds me more of summer than a watermelon does. It’s a thing! So let’s blend a favorite summer treat with a yummy fruit… literally!
I’m sure at some point you’ve had a watermelon popsicle, but I’m going to say, probably not like this. This is my most loved recipe so far and best of all it’s fool proof to make.

What you’ll need…

Ingredients/ supply list
Seedless watermelon
32oz tub plain yogurt
1 pouch ice cream powder
2 tbsp raw sugar
Fresh blueberries
Parchment paper
Popsicle sticks
Tray or cookie sheet
Start by…
Cut out a watermelon disc and separate rind by cutting along the ring as neat and evenly as possible. Set rind aside (should look like a ring). Cube the remaining watermelon and place in blender.
Also add to blender- yogurt, ice cream powder, and sugar. Blend at high speed for 5 minutes. Set aside.
Line cookie sheet or tray with parchment paper and place watermelon rind on it.
Poke popsicle sticks along the outer part of rind, equally spaced until you’ve completed the whole ring.
Pour in watermelon mix and top with fresh blueberries (to your liking).
Place in freezer overnight for best results.
When ready to eat, thaw for a minute and cut into slices, line up with popsicle sticks for even pieces.

Like I said, super easy to make, delicious, and pretty to eat! Give these a try and let me know what you think!

Enjoy!!
XOXO, terri
