Apple Pie Cupcake Recipe

If you love apple pie, this recipe is for you! Not only is it soo easy to make, it melts in your mouth and is utterly delicious.

I tried something a little different for the crumble this time. Instead of the usual, I decided to switch up the texture and have a little more crunch. Bare apple chips make THE perfect crumble, you guys!

If you want to cut corners for this recipe- you don’t have to make the filling from scratch. Apple pie filling from the store works just fine!

What you’ll need…


1 stick of butter

2-3 large baking apples, peeled, cored and diced in to 1/4-inch cubes

1/3 cup sugar

1/2 teaspoon ground cinnamon

1/8 teaspoon salt

Juice from half a lemon

1 can (8 count) refrigerated cinnamon roll dough

Whipped cream for topping

Crumble topping:

1/2 cup bare Granny Smith apple chips

1/2 cup bare cinnamon apple chips

1/2 stick of butter

1 tbsp brown sugar


Prep those apples! OR skip this process entirely and buy a can of apple pie filling 🙂

Preheat over to 400 degrees. Lightly spray muffin tin with non stick cooking spray.

Peel, core, and dice apples. Place in a large bowl. Squeeze half a lemon, mix well. Set aside.

Melt 1 stick of butter in medium sauce pan. Add 1/3 cup of sugar, 1/2 tsp of cinnamon, 1/8 tsp salt. Mix until well blended.

Add diced apples and simmer, tossing occasionally, until they start to soften; about 5 minutes.

Pro tip: keep an eye on the sugar mixture, when it starts to reduce (look syrupy), remove from heat and side aside until apples soften.

Crumble topping directions:

In a large bowl add both apple chips. Crumble with wooden mallet. Add in 1/2 stick of melted butter, 1 tablespoon of brown sugar and mix well.

Separate cinnamon roll dough into 8 pieces. Flatten each piece to about 4 inch round. Place in each muffin cup. Fill each cup with apple filling mixture. Top with crumble and place in over for 10-12 minutes. Cool in muffin tin for 5 minutes. Transfer to serving dish and top with whipped cream, cinnamon dusting, and an apple chip. Serve immediately, whipped cream doesn’t keep! 🙂
