Puff Pastry Flags

Need a cute themed pastry for your next patriotic event? I have just the one- it’s level beginner but looks like an expert baker made it!

This dessert is for the fruit lover! I’m sure you could substitute some of the fruit for chocolate or Nutella if strawberries aren’t your thing.

So let’s get right into it!

What you’ll need…

• 1 puff pastry sheet packet (comes with 2 sheets- makes 6 flags)

• 1/2 cup sliced strawberries

• 1/3 cup blueberries

• 1/3 cup honey

• 1 tbsp vanilla extract (and extra for splash)

• egg wash (1 egg/ splash of water/ mix)

• 1 tbsp raw sugar

How to make it…

Preheat oven to 400 degrees. Then start by mixing your honey spread. In a small bowl, combine honey and vanilla extract. Mix well, set aside.

Remove puff pastry sheets from box. Place on parchment paper lined cookie sheet and using a pizza cutter, slice each sheet vertically into 3 equal parts. The sheets are already folded in a trifold pattern so it could serve you as a guide on how to slice.

Once you have your three equal pieces. Turn them horizontally (pictured below). Begin to slice thin equal strips ONLY on the right hand side of puff pastry rectangle. Right to left motion.

Spread honey mixture ONLY onto left hand side of the rectangle pastry (see below).

Time to assemble your fruit! I like to add 6 blueberries at the top left hand corner of the honey mix covered side. Gives it more of that American flag look. Then I arrange my strawberry slices to fit the remaining square portion.

Once your fruit is all laid out, begin to bring over the strips of puff pastry to cover the fruit. Bottom to top strips first, right to left motion. Leaving the top two strips for last- this way you’re able to slice off about 1/2 inch of those last two strips making sure not to cover the blueberries.

Once this step is completed, brush egg wash over top of the puff pastry flags and sprinkle with some raw sugar. Place in oven to bake for about 15-20 minutes or until golden and fully cooked (not gooey and raw underneath).
