Watermelon Cake
This might be the only good thing to come out of 2020, and if so, I’ll take it!
Just a little over a month ago, I saw a friend share a birthday party post in which she had made her daughter a watermelon cake. Not a watermelon flavored cake but an actual watermelon dressed up with the icing and “all the fixins” as we say in the south. I was stunned and also thought, why it never occurred to me to do the same?! I have a gluten free diet and coming up with new ways to enjoy desserts is my life’s work, ha! Anyway, after tons of research (not really, it’s not rocket science), and a few adaptions… I have THE easiest recipe to this fun concoction! Make sure to try this before watermelon season is over, you won’t be sorry!
What you’ll need…
• Seedless Large Watermelon
• 2 1/2 cups of Heavy Whipping Cream
• 1/4 granulated sugar
• teaspoon of pure vanilla extract
Garnish (optional) Fresh mint sprigs, blueberries, strawberries, almond slivers
Yields 12 servings
Prep: 30 minutes
How to slice it up!
Start by slicing off both ends of the watermelon (save those pieces for later!)
Stand watermelon upright and continue to carve away the rind until you are left with the ripest (reddest) part of center.


Easy peasy, right?? Now, before you start working on that icing, cover watermelon in paper towel to make sure any excess water is soaked up.

Leave it on there until you’re done with the icing mixture!
Icing mixture!

In a large mixing bowl, (I used my kitchen aid mixer) beat the heavy cream on high speed until it begins to thicken. Add the sugar one tablespoon at a time, and the add pure vanilla extract. Beat until the mixture is thick and spreadable. Mix about 3 minutes!




Time to decorate!
Transfer the watermelon to a cake stand or serving plate. Remove paper towels and pat dry any excess water. Spread the whipped cream over the entire surface of the watermelon.


Remember the cut round pieces of the watermelon? Using a melon baller, scoop out a few balls for garnish!
Decorate your cake any way you like and remember to store in refrigerator!
